Absinthe Pacifique is a product of Pacific Distillery, a family-owned and run artisanal distillery specializing in creating world-class spirits at a local scale. Pacific Distillery can be found in the middle of Woodinville’s Wine Country just outside of Seattle, Washington.

Absinthe Pacifique is formulated and distilled in exact accordance with an 1855 French recipe, using only organically-grown botanicals. Much of the Grande wormwood and Roman wormwood used is grown in their own herb gardens. So if you are looking for a modern, yet traditional, organic absinthe to try, then look for the label at your local store. It may not have reached you yet as this company’s absinthe is produced in limited quantities.

The Wormwood Society gives Absinthe Pacifique 4.6 stars and states that it is “An excellent, delightful, fresh absinthe. The alpine herbal, sweet tinged flavor with the excellent wormwood finish is superb.” Check out their website for more reviews.
